Sun dried Tomato Corn

Sun dried tomato corn stir-fry is very easy recipe with two flavorful options. The first option used three ingredients. and the second uses four ingredients, including quinoa for protein  (a grain) which make a complete meal.

Sun dried tomato are as nutrient rich as fresh tomatoes. They are rich in vitamin C, vitamin E and vitamin A and Lypocene.

Sun dried Tomato Corn Recipe

Ingredients


2 cups of fresh corn, shaved or 1 ½ cups of frozen corn

½ cup of diced sun dried tomatoes

2 tsp. garlic, minced (or more)

3 tbsp. canola or peanut oil

cup of water Dash of salt (optional)

1 ½ tbsp. low-sodium tamari (soy sauce)

1 tbsp. red onion, chopped (optional)  


Variation

 Replace sun dried tomato with 1 small tomato chopped

Instructions


In a skillet, heat oil (medium heat).

Add garlic.

Cook for 1 minute. Add onions (if using).

Cook for 2 additional minutes.

Add tomato.

Sprinkle salt directly on tomato and stir.

Cook for 1 minute. Add corn, water, and tamari.

Stir and cover.

Simmer for 5 minutes. Remove cover and simmer for 2 additional minutes.

Serves 2.
