Mock Chicken Salad using almonds

Raw almonds are the best nut to have because of their high alkalinity or pH balance. Not more than a handful a day is recommended. However they can be difficult to chew. Many people have given up raw almonds after a costly visit with their dentist as result of breaking a tooth or cap.

There are other reasons or benefits soaking almonds. As the almonds soak the nutrients and enzymes become more bio available to the body. They become more digestible. I feel more energetic after eating soak almonds. This link helps explain the benefits of soaking almonds.

How to Soak Raw Almonds


-Put one to two cups of raw almonds in  a medium size mixing bowl.

-Cover with pure water. Let stand until almonds swell. You should see the 'veins' as they swell.

-When you can break an almond with your finger, they are ready for use.


Ideas for Using Soaked Almonds

  1. Use as a stand alone snack
  2. Excellent with a ripe banana
  3. Add it to your favorite cup of yogurt
  4. Simply chop or cut with a knife and add to salads
  5. Grind and use with dates as pie crust
  6. Make a mock chicken salad (see recipe below)
  7. Create almond date balls (see recipe below)

Recipe for Mock Chicken Salad


Ingredients


 2 cups of soaked and rinsed almonds

2 stalks of celery, chopped fine

1/2 small onion chopped fine

2 TB vegetarian mayo

1 tsp pickled relish

1/8 tsp mustard (optional)

1/8 powdered rosemary


1TB water

Variations


- add poultry season to replace the rosemary.

Instructions


In a blender or food processor, grin almonds using a tablespoon of water (or more) as needed. 

Place ground nuts in a medium mixing bowl.

Add celery and onion. Mix well.

In a small bowl, mix mayo, relish, mustard and rosemary.

Mix well. If too dry add more mayonnaise.

Serve with crackers, on a bed of salad or pita or flat bread.

Raw Almond Date Balls

Nut Date Balls

Ingredients

2 cups of soaked raw almonds

4 to 5 pitted ma dates

1/2 cup shredded unsweetened coconut

2 TB of water

Instructions

-In a food processor chop almonds into very fine pieces. Place in mixing bowl

-blend dates to a smooth paste, using a little water if needed. Add to mix bowl.

-with a spoon, mix the two ingredients.

-sprinkle coconut onto a large plate

-scoop a teaspoon of the mixture and place into the palm of your hand. Roll into a ball and place on the coconut plate.

-Gently roll ball until it is covered.


-Place on plate of storage container.

-refrigerate immediately
