Veggie Chicken Wraps are low-calorie, low in fat, nutrient-rich and easy to prepare. They also travel nicely.

This set of healthy recipes using veggie chicken wraps provides nutrient-dense, delicious low fat, low cholestrol alternatives. Wrap One uses avocado which supplies the good fat (monosaturated fat) and over 20 essential vitamins, minerals and phytonutrients,

Two Delicious Variations


Wrap One


1 ripe avocado

1/2 lb. or 8 oz of mixed green salad chopped. 

9 (or more ) vegetable mock chicken strips and cook as directed. 

3 large whole wheat flour tortillas

1 tsp tamari or soy sauce

Instructions


Scoop the avocado out and place in a small bowl.

Add tamari and mash with a fork to make a paste.

Warm tortillas or use at room temperature.  Place on plate or cutting board.

Spread avocado paste on each tortilla. 

Add a layer of salad greens.

Add chicken strips in equal amounts across all three tortillas.

Fold one end and Roll tightly.

Use tooth pick or foil to hold in place.

Wrap Two


1/2 lb. or 8 oz of mixed green salad chopped. 

Add to a medium size bowl. 

Add 4 TB goddess dressing

1/8 cup shredded soy  mozzarella cheese

1/8 cup of raisins. 

A drizzle of sesame oil

9 (or more ) vegetable mock chicken strips and cook as directed. 

3 large whole wheat flour tortillas

Instructions


Add all ingredients to bowl. With two spoons mix well and set aside. 

Prepare veggie chicken as directed. 

Warm tortillas or use at room temperature.  Place on plate or cutting board.

Scoop 1/3 of the salad on each tortilla.

Add chicken strips in equal amounts across all three tortillas.

Fold one end and Roll tightly.

Use tooth pick or foil to hold in place.


*Note

We used chickenless crispy tenders from Trader Joe's cut in half lengthwise. And heated them on a small grill to allow all the oil to run off.
