Healthy Ginger Cookies

Healthy Ginger Cookies use fresh ginger. They are easy and will be loved by all ginger lovers.

Ginger Cookie Recipe


Ingredients

2 1/2 cups of all-purpose flour (not bleached or enriched)

1 tsp. baking powder (aluminum free)

1 tsp. baking soda

1/2 tsp. salt

3/4 cup maple syrup

1/4 cup of dark molasses

1/2 cup canola oil

5 tbsp. fresh ginger, grated and packed 

Instructions

Preheat oven to 375 degrees. Peel the skin off the ginger then use a food processor to break the ginger down into a very fine moist meal (grated texture).

In a large bowl, stir together the flour, baking powder, baking soda, and salt.

In a small bowl, mix the maple syrup, molasses, oil, and ginger.

Stir into dry ingredients until "just mixed."

Scoop spoon-sized portions onto a lightly oiled cookie sheet (air pan) and bake for 12-15 minutes.

Makes 18 large or 36 (or more) small cookies.
