Potatoes and Cabbage

Potatoes and Cabbage is a delicious dish using mini potatoes spiced with rosemary  and olive oil. Easy and completed in minutes.

Potatoes are very nutritious. Historically they were a dependable vegetable during hard times. Of late popularity increased with the onset of the french fry and the baked potato. It is not seen as a nutritious food due to  the fact that it is fried, many of the nutrients are lost.  The "fix ins" for the baked potato ... sour creme and butter, has caused many of us to back away from  the potato altogether. But did you know ....

Potatoes and Cabbage Recipe

Ingredients

1 pound of mini potatoes, washed unpeeled

1/8 cup of olive

1 cup of cabbage in 1/4" pieces

1 tsp (or more) rosemary powder

1 tsp sea salt (optional)

Instructions

Preheat oven to 350 degrees.

Place potatoes on baking sheet. Spread evenly.

Drizzle oil and sprinkle rosemary powder.

Bake for until potatoes can be pierced with a fork, turning occasionally.

Remove from oven, add cabbage and mix well.

Return to oven and bake until cabbage has wilted.


Serve immediately. Serves 4.
