Cream of wheat is a traditional comfort food for many made with healthier ingredients in minutes! It can be a challenge getting the daily recquirmenets of good fat, fruit and other nutrients on a daily basis. So this quick cereal recipe will help by adding fresh avocado, which is an excellent source of good fat. This makes it a heart healthy meal.
Additional fruit can be added, for example raisins as a natural sweetener or another natural sweetener. It can be a hidden ingredient for the smart cook who knows what the family needs. The is no noticeable change to the flavor and very little evidence of the avocado at all. We use almond milk i the recipe, however other plant milks (see healthy ingredients list) can be used.
1/2 cup Bob's Red Mill Cream of Wheat
1/4 tsp sea salt
1/2 cup almond milk
3 tsps ripe avocado
natural sweetener (optional)
Add fresh fruit, cinnamon and/or nuts.
Elminate avacodo and use tsp. of flaxseed oil, which is also a good fat.
Bring two cups of water and salt to a boil. Remove from heat and slower pour cream of wheat stirring constantly. Return to heat, bring to a boil. Reduce heat and let simmer for 2 to 3 minutes. Add almond milk.
In each serving bowl add one teaspoon of avocado and smash, spreading it out all over the bowl.
Pour mixture on top of the avocado. Add natural sweetener and stir it into the avocado and cereal.
Add additional fruit and nuts if desired.
